#027 - ACAR FISH: IKAN SENANGIN

A bit to say Hello to everyone and will be back again.
Came here to jot down my mom's recipe.
Ingredients: Fish (Ikan Senangin), turmeric, ginger, lemongrass, garlic, carrots, cucumber, red chili and lemon/white vinegar. I option to use Apple Cider.
A generous friend of mine gave me these and so try my best to cook and achieve the same taste like my mum does.
Adore the colorful platter of my mum Acar Fish recipe, cooked by me with my own version.

Method:
  1. First of all fry the fish until golden brown.
  2. Cut and julienne all the items as shown from the first photo.
  3. Marinate the carrots and cucumber with apple cider and sugar to taste. squeeze the excess water and leave a side.
  4. With some vegetable oil, lightly fry up the slices of garlic, toasted and set aside.
  5. Stir fry the turmeric, ginger and lemongrass using the same oil until fragrant.
  6. Add in water and apple cider and let it to a boil.
  7. Add in sugar and salt to taste. It is up to our own preference.
  8. Off the fire and set a side.
  9. In a platter, spread the fried fish, marinated cucumber and carrots.
  10. Use a ladle to pour the turmeric soup to cover over it.
  11. Sprinkle the fried garlic and red chili as desire.
  12. Continue to spread another layer of #9 & #10. If not you can also spread it in another separate plate.
  13. Let the fish soak all the turmeric juices. When it is cool enough, keep it overnight in the fridge.
Jot down the recipe here for my reference.

Wish you all have a nice day and I'll be back soon......

  1. I love this type of fish, just deep fry till crispy and eat, including most of the bones. Never had them with acar, sure would love to try.
